The Covid-19 crisis has damaged gastronomy like few other sectors. The worst pandemic in the last hundred years has led to shops closing, customers being wiped out and a cultural business that is worth hundreds of millions worldwide being rocked to its foundations.
The first three-star restaurant in the United Kingdom gives its point of view on the future of gastronomy, which will have to go hand in hand with a certain change in style. Will haute cuisine survive? How much of a turn will it take?
