82 years of culinary knowledge

With a history spanning more than a thousand years, Colombian gastronomy now speaks a universal language, but without forgetting its roots. These roots are black, deep, manifested in different ways by the country’s various regions, united in a whole that Colombians are proud of.

At the age of 82, Maura de Caldas brings together all of this heritage and proudly shows it off, trusted and well-known after a lifetime of service to traditional gastronomy. Few people like her can explain the black influence on the culinary resurgence of a nation that looks at Peru or Mexico from one side to the other.
