Ángel León continues to surprise us with his insatiable quest along the sea bed.

European cuisine has historically been linked to taste, unlike the East, which has also valued texture. In his persistent underwater search, the ‘chef of the sea’ retrieves more surprises from the depths and brings them back to land for us, products with an incredible texture created by nature itself.
