Post-Covid. Diversification that looks to Italian tradition

Looking to the past is becoming a popular trend in gastronomy. Here we have Perdomo’s personal vision of this.

His creative cuisine has been hitting the culinary heights for years in Italy, in Milan. However, in view of the current situation, as well as displaying his culinary creativity, this Uruguayan-Italian chef aims to continue on his way, and to do so by expanding towards a variety of styles of Italian traditional cuisine.
