The environment is a source of inspiration for chefs, but it can also be their biggest and most precious pantry. That is what makes it unique compared to offerings from other regions, other places.
Using products from the area and using the natural ingredients offered by the environment are two of the keys to Miguel Ángel de la Cruz's cooking, which goes beyond the walls of his kitchen to the paths and mountains of Matapozuelos to discover what the forests and meadows have to offer.
Appreciating small natural treasures can be the key to sustainable local cuisine that encourages another way of relating to our region.
