Pablo Loureiro

Chef at Casa Urola (San Sebastian, Spain)

In 2012, he took over Casa Urola as a leader with criteria. His cuisine is the soul of the old part of San Sebastian.

This chef from a catering tradition, started his journey at the Rodil restaurant in San Sebastian, founded by his grandfather and later run by his parents, where from his childhood he was imbued with the recipes of traditional Basque cuisine. His time in the kitchen of the Branka restaurant - which he turned into a reference point for San Sebastian's gastronomy - catapulted him into running his own restaurant, where he was able to develop his vision of traditional cuisine.

He did so in 2012 by taking over the culinary reins of Casa Urola, the legendary restaurant founded in 1956 in the old town, from his wife Begoña Arenas. Together, they prepare updated traditional cuisine in which the nobility of the product is enhanced by the aromas and flavours of the charcoal grill, the restaurant's trademark. In 2019, Loureiro was awarded the Euskadi de Gastronomía Award for “Best Restaurateur” by the Basque Academy of Gastronomy.
