Matías Perdomo
Chef at Contraste* (Milan, Italy)
He has revolutionised a traditional osteria with acquired knowledge and a lot of work. Born in Uruguay, he is currently one of the most influential chefs in Milan.
A private course was the spark that triggered this Young Uruguayan’s passion for cooking. Born in 1980, at the age of 14 he was already quite clear about what he wanted to be: to become a professional chef. Perdomo took his knowledge to a small delicatessen, and then went on to a French-style catering service and a restaurant specialising in Italian food. Later on, his desire to develop further encouraged him to reach out to and support a friend in Italy, at the Pont de Ferr restaurant in Milan. In the same period, he took time out to travel to Spain and continued learning from stars like Martín Berasategui or Joan Roca.
In 2011, his creative talent and border-free style of cooking earned him a Michelin star, which he consolidated four years later in his own restaurant, Contraste. In 2018, Perdomo was already at San Sebastian Gastronomika as a speaker.
