Luis Arrufat is chef coordinator of the department of master’s degrees and other courses at the Basque Culinary Center. In addition to having been head of confectionery at elBulli Restaurant in his last year and part of Ferrán Adriá's team for 6 years, he has held positions of responsibility in other R&D departments of restaurants such as Arzak and the José Andrés Restaurant chain in Washington DC. In his intense professional career and constant training, he has worked at other Michelin-starred restaurants such as Mugaritz, Drolma, Akelarre, Quique Dacosta, Elkano and El Chaflán.
