Reviving the essence of the old-time eating houses and focusing on cooking and how customers are treated. This is César Martín’s maxim.
After first starting out as an entrepreneur at La Abacería de la Villa in 1996; working in different restaurants, such as Balzac & D’G; and earning prestige as an outstanding chef in areas like cooking game, César Martín repeated the experience as an entrepreneur and manager when he opened laKasa in early 2012, in association with his wife, Marina Launay, who is in charge of the dining room at this restaurant in Madrid. Conceived as being an eating house or a tavern, laKasa aims to have fresh seasonal produce that is available on the market.
Incidentally, it is worth highlighting that César Martín, a big fan of cycling, was a chef for the national cycling team in the world road championships.
