One of the most influential chefs of our time, Ángel León possesses that kind of innate talent that characterises those people who move gastronomy forward and take it to lesser-explored places like the sea.

He has a discourse based on respect and fantasy and combines tradition and progress in perfect symbiosis. A sailor by vocation, his passion for the sea and fishing, and for knowledge of the nature that he feels closest to, fish, algae and salts, means that he reflects this really intimate sphere in his cooking, where he extracts from the sea what other people don’t see, so that he can offer diners new ingredients and dishes.

He has received countless awards in his professional career including the National Gastronomy Prize 2013, the Chef of the Future 2011, the highest level of recognition in the Michelin Guide for Aponiente or 94th place in The World’s 50 Best Restaurants 2019.
